Anytime I come close to Emmy's cage, she/he runs away and hides in her little club deck. I hate scaring her like that.

Any tips on how to improve this?

my Skittles does that too!
when i try to hold her she jumps back into the cage.
i would think if you walk up slowly she wont notice your coming that much.
but when you make sudden movements shes scared, i try practicing walking up slowly, my mice seem not to notice me that much,

Yeah, I try walking slowly but Emily see's me coming and bolts.

I am going to try giving her a treat every day at feeding time, holding the treat in my hand in the cage and helping her to get used to me.

When I tame new mice I use a tp roll to catch them, then put them in a rubber maid bin(the bath tub works too) with nothing init but your hand. Keep your hand still and soon the mouse will investigate. It doesn't take long, soon she'll see you mean her no harm and exploring human is so much more fun then playing in an empty tub.
